Job Summary
Seeking a responsible, dedicated, energetic individual to train alongside the Pit Master as an apprentice in daily operations, duties, and functions. The apprentice is responsible for the daily smoking, preparing, and processing of the various cuts meats and poultry. The Pit Master Apprentice must comply with all USDA, FDA, and HACCP sanitation, quality, health, and safety standards. This position requires the use of all food processing, warehouse equipment, and supplies in an appropriate manner to ensure inventory control, safety, and efficiency. This position will also be an associate to the Warehouse Manager. Duties also include receiving, storing, and distributing materials such as supplies, products, and equipment from the Commissary/Warehouse to our Rick's Barbecue locations. The position will be responsible to float between the Pit Master and Warehouse Manager as needed.

Essential Job Functions, Pit Master Apprentice:
• Develop a thorough understanding of the preparation and smoking processes of various cuts of meat under the training and guidance of the Pit Master to ensure premium quality of all products produced through appropriate temperature, flavor, and processing standards as set by Rick's Barbecue, Inc.
• Follow all established proprietary recipes only under the supervision of the Pit Master, without deviation
• Follow all written SSOP and HACCP plans exactly, without deviation
• Build and maintain all fires in fireboxes following all safety protocols in order to prepare and smoke meats and poultry according to the processes and procedures established
• Abide by all USDA quality, sanitation, health, and safety standards. Exhibit proper meat and poultry preparation andhandling techniques. Be willing to attend food safety training as offered
• Store and keep meats and poultry in an appropriate manner, with date and time labeling and documentation
• Demonstrate the ability to understand and carry out all required monitoring, testing, calibrations, documentation, and processes as outlined in the established and monitored HACCP plans
• Demonstrate a working knowledge of Rick's Barbecue, Inc. policy, Tennessee Department of Health, USDA, FDA food safety standards and practices
• Maintain a safe, secure and healthy work environment by cleaning work stations, supplies, and equipment
• Ensure equipment is operated correctly and in good working order at all times by following operation instructions, performing preventative maintenance / cleaning, and informing management of needed repairs & noted malfunctions
• Maintain regular and required attendance
• Required training and certification as a forklift driver
• Perform all assigned opening, mid-day, and closing duties and other duties as assigned

Essential Job Functions, Warehouse Worker:
• Receive incoming freight into the Warehouse and check invoices at the receipt for validation of items received
• Ensure order accuracy by comparing shipping documents to purchasing orders
• Check expiration dates of all products; check the condition of products, as well as the number of cases and pallets and keep all inventory rotated according to FIFO (first-in–first-out) guidelines
• Report any variance in quantity and/or damaged products to the appropriate supervisor
• Have a thorough understanding of safety and sanitation requirements, including food safety procedures; comply with all company policies and procedures, including the safe operation of equipment
• Maintain a safe and clean workspace which includes the breakdown of empty boxes to recycle, sweeping floors, organization of items on shelves, removing any debris and keeping all items off of the floor and on pallets and shelving as codes require
• Safely operate company-owned trucks and equipment within, as well as to and from the Warehouse
• Safely operate a pallet jack, forklift and other equipment to load and unload stock from the truck, as well as moving stock to appropriate locations within the Warehouse. Must complete training for certification of forklift operation
• Put away and store inbound freight according to set policies
• Correctly pull stock and other products to fill individual store stock orders, as well as catering equipment and supplies
• Meet and maintain productivity standards
• Maintain regular and required attendance
• Perform other duties as assigned

Work Environment:
• This is a full-time position working an average of 35-40 hours per week, with occasional evenings and holidays required during peak season
• This position operates in a food manufacturing area and requires the use of equipment such as pits, ovens, stoves, slicers, knives, and other various tools
• This position is in an area with frequent exposure to smoke, fire, heat, and steam, as well as extreme hot and cold environments
• This position is in an area where warehouse equipment and supplies are frequently in operation
• This position is very active and requires sitting, standing, walking, bending, twisting, kneeling, stooping, crouching, and climbing all day. The employee must frequently lift, push, pull, and/or move items over 50 pounds
• This position requires an employee that must be able to perform the functions listed

Job Qualifications:
• Class B CDL required or agree to obtain
• Class A CDL preferred
• A good driving record required
• ass DOT drug screen and physical requirements and maintain a DOT health certificate
• Ability to multi-task and display excellent time management skills
• Excellent communication and interpersonal skills required with a strong ability to make decisions
• Must possess and exercise the ability to engage critical thinking skills
• Ability to professionally interact and communicate with on-site / in-house Federal USDA inspectors
